1.Slice chicken breasts into 1 inch cubes and place in a bowl, set aside
2.Zest two of the lemons and set aside
3.Juice all 5 lemons
5.Combine zest, lemon juice, garlic, oregano, olive oil, salt and pepper into a bowl and mix
6.Pour mixture over chicken and marinate in refrigerator for 4-6 hours.
7.If using wooden skewers, soak skewers in water for 15 minutes before adding chicken
8.Slice zucchini into 1/4 inch slices
9.Thread one cube of chicken onto skewer and then one piece of zucchini and then alternate with chicken again. Repeat this process until skewer is full
10.Grill chicken over med flame until cooked, approximately10-15 minutes
11.Serve on a bed of lettuce and red onion
